zucchini bread recipe.

i love zucchini. but we're growing it and my momma and daddy are growing monster sized ones and it's getting a little out of hand.

so instead of eating zucchini with every stinkin' meal, i whipped up some zucchini bread. the last recipe i tried was a tad tough for my liking, but this one is perfect! it's from my mawmaw's recipe box.

if your house is being taken over by zucchini like ours is, you should make some!

and of course i didn't take a picture of the finished product and it's eaten now, so you definitely wouldn't want a picture of that. you'll just have to trust me that it sure is some pretty bread.

you need:

4 cups shredded [unpeeled] zucchini
3 cups all purpose flour
2 1/2 cups sugar
1 1/4 cups oil
4 eggs, beaten
1 tbsp. + 1 tsp. vanilla extract
1 tbsp. cinnamon
1 1/2 tsp. salt
1 1/2 tsp. baking soda
1/2 tsp. baking powder

and i added 1 1/2 cups chocolate chips. cause i like to live on the edge.

and then:

grease 2 loaf pans. preheat oven to 325. mix all ingredients together for approximately a minute. don't overso it, or your bread'll be tough. fill the loaf pans and bake for 50 minutes or so.

and then give your pal lindsey jo your extra loaf. you don't need 2.
